HOW TO MAKE A HEALTHY & FILLING OMELETTE
Hello guys!
So I was skipping around my kitchen the other day to my favourite song at the moment (Needed Me by Rihanna) when it occurred to me that I wasn’t being fair hoarding this simple and easy recipe for a quick and healthy omelette!
I’m always in a rush out the door in the mornings because between snoozing my alarm till last minute and pretending I’m Rihanna in the shower, I am never ready on time!
The famous saying “breakfast is the most important meal of the day” is no joke because I’ve realized that I have a more sane and productive day on the days I’m able to get something in the stomach in the A.M
I’m a major sucker for 3 things in life: Apple juice, Peppermint tea and a good ol’ healthy omelette.
Enough of me rambling, let’s get to this recipe:
What you’ll need:
- 3 Eggs
- Skim milk
- Peppers (sweet & habanero)
- Veggies (I used kale, you can use spinach)
- Onions
- Diced pre-grilled chicken breast
- Olive oil (spray or liquid)
- Spices
What you’ll do:
- Break egg whites in a bowl (I use 2 egg whites and one whole egg because, the fatty in me was crying at the sight of the yoke down the drain)
- Pour a little skim milk in the eggs to fluff it up and whisk together
- (You can add spices to the whisked eggs at this point or wait till the end)
- Chop veggies, onions, grilled chicken & peppers
- Preheat oven at low temperature (yes, oven) for later use.
- Grease up iron pan, I highly recommend using a spray olive oil but the liquid alternative works just fine too
- Set your stove-burner on medium heat and pour your mixture into your pan.
- Wait about 2-3 minutes then grab the pan and lift it up a little bit to see if the egg is cooking and taking a circular shape as it covers the whole bottom of the pan.
- Once you’re sure the eggs are cooking nicely, add chopped veggies, onions, peppers, diced chicken breast like a topping.
- Switch from the burner to the pre-heated oven to cook the top part for about 2-3 minutes
- Bring the pan out the oven and throw your desired spices over the eggs.
- That’s it!
It’s also advisable to use a non-stick pan so that the eggs roll off nicely, but if you don’t have that, carefully take it out the pan with a spatula.
